UIC wins food-safety grant

CHICAGO - Researchers at the University of Illinois at Chicago have won a $600,000 federal grant to study how to better educate AIDS patients about the risks of eating certain foods.

A UIC statement says nearly half a million people in the U.S. are living with AIDS. And it says AIDS patients whose immune systems have been suppressed are at greater risk of getting life-threatening infections from food-borne illnesses.

The principal investigator of the UIC study, Mark Dworkin, says many people with AIDS aren't aware of the range of food-safety issues. Some foods, for instance, may have a tendency to carry pathogens and so should be heated before being eaten.

New guides will be developed based on the research. They'll later be distributed to AIDS clinics.
